We are pleased to announce that that Dr Donagh Hennessy has joined CABR as a Postdoctoral Scientist (Feedstock Mapping), where he contributes to the TRANSFORM project (Transforming Food Waste into Functional Ingredients).
Dr Hennessy attained his bachelor’s degree in Food and Agribusiness Management from University College Dublin in 2016. In 2017, he completed his Master of Science in Climate Change, Agriculture, and Food Security at the National University of Ireland Galway.
In 2024, he successfully defended his PhD thesis, ‘The Role of Pasture-Based Ruminants in Circular Food Systems: The Case of Ireland’, at Wageningen University & Research. His research focused on the potential role of increased circular reincorporation of food loss and waste into the national food system.
Dr Hennessy’s current research within the TRANSFORM project supports the development of the bioeconomy through the valorisation of human-edible food loss into high-value food products.
