Can Mushrooms Help Reduce Obesity? (CABR Research Work Spotlight)
Mehdi Amiri Goushki, PhD Researcher in the Bioengineering Research Group (Organ-on-Chip) at the Centre for Applied Bioscience Research (CABR), is investigating how compounds extracted from mushrooms could support obesity reduction through natural, sustainable approaches.
Mehdi’s research focuses on Ultrasound-Assisted Extraction (UAE), an eco-friendly method that uses sound waves and solvent systems to isolate bioactive ingredients from various mushroom species. These extracts are then characterised and assessed for antioxidant activity.
Mehdi also quantifies key compounds such as proteins and carbohydrates, which may influence metabolic health. Mehdi’s PhD research is supervised by Dr Evert Fuenmayor and Dr Emma J. Murphy.
